Soups - New Trend

(1) Cold cauliflower and smoked salmon soup:

Sweat chopped shallots in butter, add cauliflower, water and veal stock, cook. Liquidize the soup and boil, thickening with corn flour and cream, cool. Mould coarsely chopped KENMARE™ Smoked Irish Salmon in little cup, unmould on soup plate, pour cold soup around, chopped chives.


Soups - New Trend

(1) Buttermilk soup with smoked salmon and mussels:

Shell open mussels in white wine, onions and parsley. Sweat chopped celery and potatoes, add mussels juice, buttermilk, half mussels chopped + half KENMARE™ Smoked Irish Salmon, boil and thicken with potato starch. To serve: reheat soup with the other half mussels and half smoked salmon in julienne.

(2) Cabbage and smoked salmon soup:

Sweat a small chopped cabbage, onions and 5 slices of KENMARE™ Smoked Irish Salmon cut in strips. Add potatoes, chicken stock and bouquet garni. Liquidise when cooked. Reheat with fresh cream and a julienne of smoked salmon.
