Smoked Salmon "darnes"

A steak of pure smoked salmon, without brown meat to be enjoyed in thick slices;
• 2 “darnes” #150gr

95% red meat, for pates, pasta and pizzas;

Special Cuts:

Fillets – “ Coeur de filet” – Loin of Salmon:

A special cut of the thickest part of the smoked salmon side, which has to be sliced perpendicularly in 3/4cm medallions –
“The best part of a smoked salmon” ;

• Whole fillets 450gr-550gr
• 1/2 fillets 200gr-300gr
• 1/3 fillet fixed weight 140g



Silver skin and brown meat removed:

...ready to use for the caterer or at home, easy sliced in perpendicular cuts of 3mm to 5mm;
